GLUTEN FREE QUINOA BITES

Friends! Hello! and…Thank You Winter for slapping me right in the face this morning! Brrrrr!

These Gluten Free Quinoa Bites are seriously one of my favourite snacks! If you love falafels, you will absolutely LOVE these cuties! They taste even better cooled with hommus or my favourite, my homemade Tzatziki!

I actually can’t believe that it’s already back to school tomorrow! Like seriously!? Where does the time go!? I have achieved quite a lot in the past 2 weeks which I am really proud of! Yay. Anyway…hopefully there will be something exciting to share soon 🙂

So, these Quinoa Bites. They are might tasty! They taste best when they are left to cool a little, served with a salad and my homemade Tzatziki! So wait no more … here is the recipe friends ↓

♥ GLUTEN FREE QUINOA BITES ♥
This recipe is Gluten, Dairy, Egg & Nut Free – Vegetarian/Vegan

MAKES 16-20 balls
IMPORTANT:
* This recipe is flexible and has options so read through first.
* The finer the vegetables/onion are diced the better the balls will hold together.
♥ Ingredients & Method ♥
1 Cup Quinoa, cooked and cooled
4 Garlic Cloves, crushed/finely diced
1 Onion, peeled and finely diced
1/3 Cup Fresh Parsley, finely chopped
1 Cup peeled/finely grated vegetables (you could use sweet potato or a mix of
zucchini/pumpkin etc)

1/3 Cup Buckwheat Flour (any flour is fine)
1/3 Cup Gluten Free Bread Crumbs (any are fine of you’re not GF)
3 TBS Oil, for pan frying
To me, seasoning is personal, but this is what I used:
1 TSP Ground Coriander Seeds
1 TSP Ground Sweet Paprika
1 TSP Ground Turmeric
1 TSP Ground Oregano
Himalayan Rock Salt
1. In a large bowl, put in the cooled quinoa, finely grated vegetables, garlic, onion, parsley, flour and seasoning. Texture should be wet and sticky.
2. In a small bowl put the bread crumbs and a sprinkle of all the seasoning and give a little mix.
3. Dampen your hands and start to squish and gently form/roll the bites into golf sized balls. You may need to dampen your hands every now again to ensure the balls are sticking together.
4. Roll the balls in the bread crumbs.
5. Heat the oil on low-medium and place the balls on the pan. Cook all sides of the balls to ensure they’re cooked and crunchy!
6. They hold better if they are left to cool a little.
Throw them through a salad & serve with your favourite dip! Check out my Tzatziki Recipe! Or eat them as they are!
